Creamy Caramelized Onion Chicken Pasta 🧅🍝 Ingredients: 1½ lb chicken breasts 10 oz spaghetti 2 yellow onions, thinly sliced 5 garlic cloves, minced 2 tbsp butter 3 tbsp olive oil, divided 1 tbsp flour 1 cup heavy cream ½ cup chicken stock 1 tsp Worcestershire sauce ½ cup freshly grated Parmesan ½ cup reserved pasta water ½ lemon Fresh parsley Garlic powder, onion powder, smoked paprika, salt & pepper Red pepper flakes, to taste 1 tbsp chili oil (optional) Directions: 1. Season chicken with salt, pepper, garlic powder, onion powder & paprika. Sear in 1 tbsp oil until golden and 165°F, then rest and slice. 2. Cook pasta until al dente. Reserve ½ cup pasta water before draining. 3. In the same skillet, add butter + remaining oil. Add onions and a pinch of salt. Cook over medium-low for 20–25 min until deeply caramelized. 4. Add garlic + red pepper flakes; cook 30 sec. Stir in flour, then chicken stock, Worcestershire & heavy cream. Simmer until slightly thickened. 5. Reduce heat to low and stir in Parmesan. Add pasta and enough reserved pasta water to make the sauce creamy and glossy. 6. Finish with lemon juice, parsley and optional chili oil. Ingredients: 2 lbs chicken breast 10 oz pasta (rigatoni, penne, or mafaldine) 6 garlic cloves, minced 2 tbsp butter 3 tbsp olive oil 1½ cups chicken broth 2½ cups hot honey marinara ¾ cup heavy cream 4 oz cream cheese 3 tbsp Italian seasoning, divided ¾ cup grated Parmesan Fresh basil or green onions Red pepper flakes (optional) Directions: 1. Season chicken with most of the Italian seasoning. Sear in olive oil for 3–4 minutes per side, then reduce heat and cook until it reaches 165°F. Remove and set aside. 2. In the same skillet, melt butter and sauté garlic for 1 minute. Add chicken broth, hot honey marinara, heavy cream, and remaining seasoning. Bring to a gentle simmer. 3. Add uncooked pasta and simmer uncovered for 9–11 minutes, stirring occasionally, until al dente. Add extra broth if needed. 4. Reduce heat to low. Korean Fried Chicken MARINADE 12–15 whole wings 4 c buttermilk 2 tbsp salt 1½ tsp pepper 2 tbsp paprika 1½ tsp each onion + garlic powder 1 tsp each mustard + curry powder 4 tbsp kimchi juice 2 tbsp lemon juice 1 tbsp soy sauce 2 thyme sprigs + 1 rosemary sprig GOCHUJANG GLAZE ⅓ c gochujang 1 tbsp garlic 1 tsp ginger powder 2 tbsp hot sauce 3 tbsp sugar ⅓ c honey 3 tbsp mirin ¼ c soy sauce ¾ c water DREDGE 2 c flour 1 c cornstarch 1 tsp garlic powder 1 tbsp onion powder 1½ tbsp paprika 2 tsp curry powder 1½ tsp mustard powder 1½ tbsp salt 1½ tsp pepper 1 tsp cayenne MAKE IT Marinate wings 2 hrs–overnight. Combine glaze ingredients, bring to a boil, then simmer 5–10 min. Mix dredge. Add 2–3 tbsp marinade to dredge and mix to create crispy clumps. Coat wings heavily and rest 10–15 min. Fry at 325°F for 5–6 min. Rest 7–8 min. Fry again at 375°F for 2 min until crispy. Brush/toss lightly with glaze. Finish with sesame seeds + green onions. Flamin’ Hot Cheetos Mac & Cheese Ingredients * 1 lb cavatappi pasta * 4 tbsp unsalted butter * 3 tbsp all-purpose flour * 2 cups whole milk * 1½ cups heavy cream * 1 tsp garlic powder * 1 tsp onion powder * ½ tsp smoked paprika * ½ tsp kosher salt * ½ tsp black pepper * 8 oz sharp cheddar, freshly grated * 8 oz Monterey Jack, freshly grated * 4 oz deli American cheese, torn into pieces * ½–1 cup reserved pasta water * 1 large bag Flamin’ Hot Crunchy Cheetos Make it 1. Prep the Cheetos. Pulverize about ½ cup Cheetos into a fine powder. Separately, crush about 2 cups into coarse chunks for the topping. Keep those separate. 2. Cook the pasta. Boil 1 lb cavatappi in well-salted water until about 1 minute shy of al dente. Before draining, save 1 cup pasta water. 3. Start the sauce. Melt 4 tbsp butter over medium-low heat. Whisk in 3 tbsp flour and cook for 60–90 seconds. Slowly whisk in 2 cups whole milk + 1½ cups heavy cream. Add the garlic powder, onion powder, smoked paprika, salt and pepper. Cook for about 2–3 minutes, stirring, until it begins to thicken. 4. Melt the cheese. Turn the heat to LOW. Add the cheeses gradually: American → Monterey Jack → sharp cheddar Stir until each addition melts before adding more. Don’t let it boil. You want the sauce a little looser than you think it should be because it’ll thicken quickly once the pasta goes in. Add reserved pasta water as needed. 5. Add the Cheetos. Start with ¼ cup of the finely powdered Cheetos and stir it into the cheese sauce. Don’t dump all the powder in—we still want that creamy orange cheese color. Fold in the cavatappi until completely coated. 6. Finish it for the video. Transfer it to your serving dish while it’s super creamy and glossy. Cover the top generously with the coarsely crushed Flamin’ Hot Cheetos, but leave pockets of mac visible. Form into a ½–¾-inch-thick patty slightly smaller than your burger and freeze for 30–45 minutes until very firm. Coat in flour → egg wash → panko, pressing the panko firmly onto the outside. Fry in 350°F oil for 1–2 minutes per side until golden and crispy. For the Burger: Make two 3-oz smash patties using 80/20 beef and top each with American cheese. For the buns, take 2 brioche buns and 4 slices American cheese and turn the two bottom halves into one smashed grilled cheese and the two top halves into another.
