I remember that chili sauce I made on day one to put over them sweet potato fries. Well, I had quite a bit left over and knew there was enough in there to make another meal out of it. So I tossed the leftovers in a gallon freezer bag and saved it for a rainy day. Surprise, shorty. It's really been raining on my parade lately. So I pulled the bag out, let it thaw, and dumped it straight into a pot. Added in another can of cannellini bean. It's light and dark red. Kidney beans, tomato juice, heavy handed amount of onion powder, garlic powder, chili powder, salt and pepper. Let that simmer on the stove until it came together, and tossed it in a bowl with some freshly shredded cheese and sour cream. Never have I gone a full day without turning my phone on do not disturb. One of my friends just called me and she was like, oh my god, you answered on the first call? I said, yeah, that's cause I was waiting on somebody else to call me and it just so happened you called first. Another thing, I have no push notifications turned on. None of my apps notify me when something is happening. I used to have my email logged in on my phone and I had to log out because I had like 10,000 emails in that email account. Like that Gmail account got so full I had to make a new one. I have like 4 Gmail accounts because they just get so full I have to make new ones. And like, I know it would be so easy to just go in there and delete all and like clear it out, but I just. I just can't do it like that. Just. That's misery. Why would I waste my time doing that anyway? The real ones know. So I make me a bowl of ramen noodles, put them in the microwave, walk through the house for something, see a pile of laundry I never started earlier today. That one's pretty big. Yeah. Okay, here's another orange guy. Oh, he's moldy. No, the chickens will love this one, though. Wait, it didn't even bust. They'll figure it out. Pumpkin count so far, too? Yeah. Still a lot of green on the stem. It takes minutes to. You. You made that noise. And then they did. This one is heavy as freak, too. Pumpkin number three. Okay, then we got this little orange guy. The last time I showed you guys this one, it was just a baby. It's grown very much. This one will be orange if it makes it. Starting to turn. There's our little funky white girl. Not quite ready yet. The stem is still very green. Gosh. Oh, let me say it again. Whoa! Got two funky white girls. Hey, mom, can I make this one? Yeah, that. That one's ready. Wait, so what's so wrong with it? Ah, spider, what's so wrong with the one white one that's shaped differently than this? It's not that stiff at the. He got that big white one, that orange one, that little white one, and then another little white one. It is September 14th, and this is today's pumpkin haul. The first of the season. And yes, I know I disappeared for a few days, work, my kids schedules, life was laughing. But we're back. And tonight I needed something easy. Start by Browning one pound of ground beef. Once that cooked, add in two boxes of Mexican raisceroni and let the rice brown for just a couple minutes. Then dump in one can of diced tomatoes, a bag of fire roasted corn and one can of drained black beans. Once you've got that all combined, add in your seasoning packets from the rascaronie and pour in 32 ounces of broth. I use chicken broth cause that's what I had on hand. And around here, honey, I'm cooking with what the Lord provides. Give everything a real good stir. Let it simmer until the rice is tender and all the liquid is absorbed. Then, because I firmly believe cheese can fix most situations, add a generous handful of freshly shredded cheese and let that melt down into everything and that's dinner. You can top it with some sour cream, serve it with tortillas, scoop it up with some chips or just eat it straight out the bowl like we did. So I made my kids favorite creamy chicken crescent rolls, mashed potatoes, and mixed it. I used one pound of chicken breast, cut it up and seasoned it with candersublin and threw that on the grill. While that was cooking, I reheated the leftover mashed potatoes from last night and opened up two cans of mixed veggies. The star of this show is the creamy sauce. You're gonna mix one can of creamy chicken soup to equal parts milk, season it however you like, and let that come together on the stove. After chicken is done, you're gonna grab a can of crescent rolls, add some chicken to each one, and roll it up like normal. Place your rolls in your church casserole dish and. And pour that cream sauce right over the top of it and then into the oven. They go at 3 70 five for about 25 minutes. Once they're nice and golden, pull them out and cover the top with some shredded cheese and stick them back in long enough to let that melt. And that is it. Day 7. Quick, cheap, real fast, and in a hurry. Only 33 more dinners to go. And she's just over the moon that there's a new girl in her class. And I'm like, well, that's really good, you know, make sure you include her and ask her to eat lunch with you and just make her feel really welcome, cause it's hard switching schools. And she says, I am, mom, I'm trying to be a good friend to her, but I think she's also in foster care. And I said, well, what makes you think that? First of all, she said, well, she talks about her parents and the home she's living in now and how she wishes she could go back to her parents. And I said, well, from the context that you just gave, it sounds like she very well could be. And that means we have to give that kid a lot more Grace, because not only do they have all of the difficult things that comes with being in your age and in the sixth grade, but they have really heavy personal things that they're going through, too. And she said, I know I'm telling all my friends that not everybody has a good home life, and I know you went through foster care. So I tell them things that you've told Me? Well, a couple days goes by, and I'm checking in. I'm asking about the friend, and she says, mom, she is in foster care. I was right. She is in foster care. And I was like, well, you know, just keep on being a good friend. Keep doing what you're doing. Well, a couple days goes by, and she's packing lunch one day, and I noticed she's got three packs of Oreos in there. And I said, Avery, why do you have three packs of Oreos? She says, why? I pack one for my best friend, one for me, and one for my new friend. And I was like, oh, okay, that's fine. I have no qualms about feeding somebody else's kid. I just don't want my kid eating three packs of Oreos. So anyways, it goes on like that for two or three weeks. Avery's taking extra snacks. They're playing with each other on the playground. And then Avery comes home with this little handwritten note. And she said, thank you for being a good friend to me. You are always there when I need you the most. Thank you for being a good friend. And thank you for treating me with kindness and respect. And she drew, like, a little heart and glued all these little stickers on the paper. Avery got this letter, and then about a week later, she gets into the car, and she's really upset. And I said, A, what's wrong? And she Said, my friend got moved to a different foster care home. And I said, okay, I understand how difficult that is for you, but just imagine how difficult that was for her, because in the span that you have known her, she has had three different places that she's supposed to call home. Her parents home, the home she was with when she met you, and the home that she's going to now. And she says, I know. She said, I'm really sad for me because I feel like I lost a friend, but I'm really sad for her because I couldn't imagine not being with you. And I'm really just sharing this for other parents, cause I know this is a difficult conversation. It's not something that is always at the forefront of our mind. But if another child can go through this, you can talk to your children about that. Y'all might think I'm crazy for getting emotional about it, but just like, looking at this, like, I know these stickers weren't something that the little girl got at school. And y'all remember my sister who told me I look like Sid the sloth? Well, she went back to work today, and because I'm apparently a much better sister than she is, I offered to make her dinner. So tonight we had fried pork chops, green beans, and homemade mashed potatoes. Started off with a quart of them half runners I canned up a while back and and added in half of one of those little bags of bacon from our Samsung. Exactly why I portioned everything out the way that I did. I'm not falling out a whole pack of bacon just for four pieces and then have to discover the rest of it is growing a science experiment in the back of my fridge. The beans were already pressure canned, they just needed enough heat to get them acquainted with the bacon. For the mashed potatoes, I used two quarts of the potatoes I canned up back in June. I heated those up, mashed them down, and added about a cup and a half of milk, a stick of butter, and a dollop of sour cream, and then ran them through my mixer until they was nice and smooth. And the main event, the fried pork chops. I added some flour and Kinder's chicken Caesar seasoning into a bowl, coated the chops, and pulled out every Appalachian woman's weapon of choice, the cast iron skillet. Add about two inches Of vegetable oil and get that nice and hot. And fry those chops until they're nice and golden on both sides. And I know some of y'all were deeply concerned about how small I portioned out those packs of meat, but tonight, I just pulled out an extra pack and fed an entire extra family, which is kind of the whole point. I can always pull out more, but I can't put half a spoiled package of meat back in the freezer. Anyway, Sid the sloth's family has been fed six days down. Okay, it's accurate level zero now. Okay, here she is. Oh, my god. This is the biggest pumpkin I have ever grown. This pumpkin weighs 35.6 pounds. I knew this pumpkin was gonna be huge. Oh, my god. I cannot believe that. In case anybody tries to say I'm lying, I'm gonna try to get this on video. It's actually 35.8. I just couldn't see cause of the sun. Holy smokes! There she is.
